Gingerbread Sticks


I received a free waffle stick pan with the purchase of better homes and gardens magazine and one of the recipes was gingerbread sticks.


I halved the ingredients as I only have the one pan.


If you don't have a waffle stick pan you could still use this recipe to make cookies, just roll into balls, flatten slightly with a fork and bake as directed.


Ingredients

63 g butter, softened
1/4 cup caster sugar
2 tbsp golden syrup
117 g plain flour
1/2 tsp ground ginger
1/2 tsp bicarbonate of soda

Method

1.  Preheat oven to 160°C Fan. (180°C conventional). Grease waffle stick pan with some melted butter.

2.  Beat softened butter, caster sugar and syrup in a medium bowl with an electric mixer until pale and creamy.

3.  Stir in combined sifted flour, ginger and bicarb. Turn onto a lightly floured surface and knead briefly and gently until smooth. Cut dough in half, then cut each half into 3 equal portions. Roll each portion into 15 cm length. Place each into the hollow sticks of the greased pan, press in evenly.

4.  Bake for 12-15 minutes or until gingerbread sticks are golden brown and just firm when lightly touched with fingertips. Cool in pan for 3 minutes. Loosen edges with a small spatula. Turn out onto a cooling rack.

Enjoy with an afternoon cuppa.
